Ayllu was the word for kinship based communities in pre Columbian Andean society. In this spirit, I am honored to welcome you into my kitchen. Enjoy family recipes that have traveled from the volcano-framed city of Arequipa, and the vibrant streets of Lima, to my home kitchen in Brooklyn. Each dish in the experience invites you to savor the stories and flavors that connected me to my Peruvian heritage growing up in NYC.

Welcome to The Allyu Experience, an intimate culinary journey that I am thrilled to share with you. This unique dining event invites you to immerse yourself in the rich, diverse flavors of traditional Peruvian cuisine, presented with my personal touch. Drawing from my deep connection to my heritage, The Allyu Experience is more than just a meal—it's a celebration of culture, community, and connection.
A Journey Through Flavors
In pre-Columbian Andean society, "Ayllu" described a kinship-based community where families lived, worked, and shared meals together. Inspired by this ancient tradition, I bring the spirit of Ayllu to my table. This sense of community is central to the Allyu Experience, where each dish evokes the warmth and unity of a shared meal.
A Unique Dining Experience
Each Allyu Experience is a bespoke culinary adventure. We start with a Copa starter, a traditional Arequipan dish that pays homage to my roots, followed by a classic Peruvian ceviche celebrated for its perfect balance of acidity, heat, and salt. In the experience, you're going to find something that is very, very faithful to traditional Peruvian food, just with my own personalization on it.
The main courses are served family-style, featuring surprise dishes. Every experience is unique. I like to sometimes go and be inspired by the freshest ingredients that I see at the market that day. The meal concludes with Mazamorra Morada, a traditional purple corn jelly dessert infused with cinnamon and pineapple. Traditionally served hot my version is served cold, providing a refreshing end to the meal.
Perfect Pairings
To enhance your dining experience, each course is paired with a carefully selected beverage. We begin with a homebrewed chicha, a low-alcohol corn beer that forms the base of many flavors in my cuisine. The ceviche course is perfectly complemented by a crisp beer, while the main course features a chilcano, a classic Peruvian cocktail made with ginger ale and pisco.

The Allyu Experience accommodates up to eight guests, perfect for intimate gatherings and special occasions. I offer both preset dates, available for booking on my website, and private bookings for a custom experience tailored to your group’s preferences.
